  • 2 cans (15 oz each) chickpeas (garbanzo beans), rinsed and drained
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (adjust for heat)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). After rinsing and draining the chickpeas, spread them out on a clean kitchen towel or paper towels. Pat them thoroughly until they are completely dry. Removing as much moisture as possible is the secret to getting them truly crispy.
  2. In a medium mixing bowl, whisk together the olive oil, chili powder, smoked paprika, garlic powder, cumin, cayenne pepper, salt, and black pepper. Add the dried chickpeas to the bowl and toss until every chickpea is evenly coated with the spice mixture.
  3. Spread the seasoned chickpeas in a single layer on a large rimmed baking sheet. Place them in the oven and roast for 25 to 30 minutes. Every 10 minutes, give the pan a good shake or stir the chickpeas with a spatula to ensure they brown evenly on all sides.
  4. Once the chickpeas are golden brown and crunchy, remove them from the oven. Let them cool completely on the baking sheet. As they cool, they will continue to firm up and reach their maximum level of crispiness.
