  • 12 pieces of mozzarella string cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons whole milk
  • 1 1/2 cups Italian seasoned breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • Vegetable oil for frying
  • Marinara sauce for dipping

Instructions

  1. Remove the mozzarella string cheese from their wrappers. If you prefer smaller snacks, cut each cheese stick in half crosswise. This makes them easier to handle and fry evenly.
  2. Arrange three shallow bowls in a row. In the first bowl, place the flour. In the second bowl, whisk the eggs and milk together. In the third bowl, mix the Italian breadcrumbs with the garlic powder and dried parsley.
  3. Roll each cheese stick in the flour until lightly coated, shaking off any excess. Dip the floured stick into the egg mixture until fully submerged. Finally, roll the stick in the breadcrumbs, pressing firmly to make sure the crumbs stick.
  4. For the ultimate seal, dip the breaded cheese stick back into the egg mixture once more, then roll it a second time in the breadcrumbs. This double coating is essential for preventing the cheese from exploding during the frying process.
  5. Place the breaded sticks on a parchment-lined baking sheet in a single layer. Freeze them for at least 2 hours. Do not skip this step! If the cheese is not frozen solid, it will melt and leak out before the crust has a chance to turn golden brown.
  6. Fill a large, heavy-bottomed pot or deep skillet with about 2 inches of vegetable oil. Heat the oil to 350°F (175°C). Use a kitchen thermometer to ensure the temperature is accurate.
  7. Carefully lower 3 or 4 sticks into the hot oil. Fry for about 1 to 2 minutes, turning occasionally, until the coating is golden brown and crispy. Work in batches to avoid crowding the pan, which can lower the oil temperature.
  8. Remove the mozzarella sticks using a slotted spoon and place them on a wire rack or paper towels to drain. Let them sit for 1 or 2 minutes before serving to allow the cheese to set slightly.
