  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, finely chopped
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prep and Dry the Chicken: Preheat your oven to 400°F (200°C). Pat the chicken wings extremely dry with paper towels. Removing excess moisture is the most important step for achieving a crispy skin without frying.
  2. Season for Crispiness: In a large bowl, toss the wings with baking powder, salt, and pepper until evenly coated. The baking powder helps break down the proteins in the skin, resulting in a bubbly, crunchy texture.
  3. Bake the Wings: Place a wire rack over a baking sheet and arrange the wings in a single layer. Bake for 45-50 minutes, flipping halfway through, until the wings are golden brown and very crispy.
  4. Prepare the Garlic Parmesan Sauce: While the wings are baking, whisk together the melted butter, minced garlic, grated Parmesan cheese, parsley, and red pepper flakes in a large mixing bowl.
  5. Toss and Serve: Once the wings are done, remove them from the oven and immediately transfer them into the bowl with the sauce. Toss well to coat every wing thoroughly, then serve while hot.
