Cut the onions in half from root to stem, peel them, and slice them into thin half-moons. Keeping the slices uniform ensures they cook evenly in the pan.
In a large skillet, melt the butter and olive oil over medium-low heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 35 to 45 minutes. If the onions start to stick or burn, add a splash of water or broth to deglaze the pan. They are done when they are a deep golden brown and very soft.
Once the onions are caramelized, remove the skillet from the heat. Allow the onions to cool significantly before mixing them with the dairy ingredients. This prevents the cream cheese and sour cream from melting or becoming oily.
In a medium mixing bowl, beat the softened cream cheese until smooth. Stir in the sour cream, mayonnaise, Worcestershire sauce, garlic powder, salt, and black pepper until the mixture is completely combined and fluffy.
Fold the cooled caramelized onions and fresh chives into the creamy base. For the best flavor, cover the bowl and refrigerate for at least one hour before serving. This allows the onion flavor to permeate the entire dip.
