  • 1.5 lbs boneless, skinless chicken breasts (sliced into strips or kept whole)
  • 3 large bell peppers (red, yellow, and green), sliced into thick strips
  • 1 large red onion, sliced into wedges
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large mixing bowl or a gallon-sized resealable bag, combine the olive oil, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper. Add the chicken strips, sliced peppers, and onion wedges. Toss everything thoroughly to ensure the meat and vegetables are evenly coated. Let it sit for at least 10 minutes to allow the flavors to penetrate.
  2. Clean your grill grates and preheat the grill to medium-high heat (about 400°F). If you are using a grill basket for the vegetables, place it on the grill now so it heats up as well.
  3. Place the chicken breasts or strips directly onto the grill grates. Cook for about 5 to 7 minutes per side. The internal temperature should reach 165°F (74°C). Once finished, remove the chicken from the grill and let it rest on a plate for 5 minutes.
  4. While the chicken is cooking, place the peppers and onions into a grill basket or directly on the grates if they are sliced large enough. Grill for 8 to 10 minutes, tossing occasionally, until the vegetables are tender and have nice char marks around the edges.
  5. Slice the chicken into strips if you cooked them whole. Toss the grilled chicken with the charred peppers and onions on a large platter. Drizzle with any extra lemon juice if desired and serve immediately.
