  • 1 tablespoon fresh lime juice
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream or plain Greek yogurt
  • Fresh cilantro for garnish

Instructions

  1. Step 1: Season the Chicken: Place your diced chicken in a medium bowl. Sprinkle the taco seasoning over the meat and toss well until every piece is evenly coated. Let it sit for a few minutes if you have time, as this helps the spices penetrate the meat.
  2. Step 2: Sear the Meat: Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the seasoned chicken in a single layer. Cook for 8 to 10 minutes, stirring occasionally, until the chicken is browned on the outside and no longer pink in the middle.
  3. Step 3: Add Fresh Citrus: Once the chicken is fully cooked, remove the skillet from the heat. Squeeze the fresh lime juice over the cooked chicken and give it one final toss. The acidity of the lime juice helps deglaze the pan and adds a bright, zesty finish to the meat.
  4. Step 4: Warm the Tortillas: While the chicken rests for a minute, warm your tortillas. You can do this in a dry skillet over medium heat for about 30 seconds per side, or wrap the stack in a damp paper towel and microwave them for 20 to 30 seconds until soft and pliable.
  5. Step 5: Assemble the Tacos: Spoon a generous portion of the warm chicken into the center of each tortilla. Top with shredded lettuce, cheese, and diced tomatoes. Finish with a dollop of sour cream and a sprinkle of fresh cilantro.
