  • 8 bone-in, skin-on chicken thighs (or boneless if preferred)
  • 1/2 cup high-quality balsamic vinegar
  • 1/4 cup honey or brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Start by patting the chicken thighs dry with paper towels. This helps the skin get crispy. Season both sides of the chicken generously with salt, black pepper, and dried oregano.
  2. Heat the olive oil in a large skillet over medium-high heat. Place the chicken thighs in the pan, skin-side down. Cook for 5 to 7 minutes until the skin is golden brown and crispy. Flip the chicken and cook for another 3 to 5 minutes.
  3. In a small bowl, whisk together the balsamic vinegar, honey (or brown sugar), and minced garlic. This mixture will provide the base for your rich, dark sauce.
  4. Pour the balsamic mixture into the skillet with the chicken. Reduce the heat to medium-low. Let the sauce simmer and bubble around the chicken for about 10 to 12 minutes. Periodically spoon the sauce over the chicken to ensure it is well-coated.
  5. Continue cooking until the internal temperature of the chicken reaches 165°F (74°C) and the sauce has thickened into a sticky glaze. Remove from heat and let rest for a few minutes before serving.
