Dutch Oven Beef Stew

  • 2 lbs beef chuck roast, cut into 1.5-inch cubes
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup dry red wine (optional, or use extra broth)
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 lb baby potatoes, halved
  • 4 large carrots, peeled and sliced into thick rounds
  • 2 stalks celery, sliced
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, toss the beef cubes with flour, salt, and pepper until evenly coated. Heat the olive oil in your Dutch oven over medium-high heat. Add the beef in batches, making sure not to crowd the pot. Sear until browned on all sides, then remove the beef and set it aside on a plate.
  2. In the same pot, add the chopped onion and celery. Cook for about 5 minutes until the onion becomes translucent. Stir in the garlic and tomato paste, cooking for another minute until the paste turns a deep red and smells fragrant.
  3. Pour in the red wine (or a splash of beef broth) and use a wooden spoon to scrape up all the brown bits (fond) from the bottom of the pot. These bits are packed with concentrated flavor. Let the liquid simmer for 2 minutes to reduce slightly.
  4. Return the browned beef to the pot. Add the beef broth, Worcestershire sauce, dried thyme, and bay leaves. Bring the mixture to a boil, then reduce the heat to low. Cover the Dutch oven with its lid and let it simmer gently for about 1 hour and 30 minutes.
  5. Stir in the potatoes and carrots. Replace the lid and continue to simmer for another 45 to 60 minutes, or until the beef is fork-tender and the vegetables are soft. If you prefer a thicker stew, you can simmer with the lid off for the last 15 minutes.
  6. Remove the bay leaves. Taste the stew and add more salt or pepper if needed. Garnish with fresh parsley before serving to add a pop of color and freshness.
