1 lb chicken breast, cooked and shredded or diced
1 cup uncooked wild rice blend (not instant)
1 medium yellow onion, diced
3 carrots, peeled and sliced into rounds
2 stalks celery, diced
3 cloves garlic, minced
6 cups chicken broth (low sodium preferred)
1 cup heavy cream or half-and-half
4 tablespoons unsalted butter
1/4 cup all-purpose flour
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and black pepper to taste
2 cups fresh spinach (optional)
Fresh parsley for garnish
Instructions
In a large Dutch oven or heavy-bottomed pot, melt 2 tablespoons of butter over medium heat. Add the onion, carrots, and celery. Sauté for about 5 to 7 minutes until the vegetables begin to soften and the onions become translucent. Stir in the minced garlic and cook for another minute until fragrant.
Add the uncooked wild rice blend to the pot. Stir it with the vegetables for about 2 minutes to slightly toast the grains. Pour in the chicken broth, dried thyme, and dried rosemary. Season with a pinch of salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 35 to 45 minutes, or until the rice is tender and some grains have “popped.”
In a small saucepan over medium heat, melt the remaining 2 tablespoons of butter. Whisk in the flour and cook for 1 to 2 minutes to remove the raw flour taste, creating a light roux. Slowly whisk in the heavy cream until the mixture is smooth and slightly thickened. This will ensure your soup is rich and doesn’t separate.
Once the rice is cooked, stir the shredded chicken and the cream mixture into the large pot. If you are using spinach, add it now and stir until wilted. Let the soup simmer for another 5 minutes to allow the flavors to meld and the soup to thicken to your desired consistency.
Taste the soup and adjust the salt and pepper as needed. If the soup is too thick, you can add a splash more broth or water. Ladle into bowls and garnish with fresh parsley before serving.
