1.5 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)
1 box (6 oz) herb-seasoned stuffing mix
1 can (10.5 oz) condensed cream of chicken soup
1/2 cup sour cream
1/2 cup chicken broth
1/2 cup unsalted butter, melted
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Optional: 1 cup frozen peas or mixed vegetables
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with cooking spray or a little bit of butter to ensure nothing sticks to the sides.
Place the cubed chicken pieces in an even layer at the bottom of the prepared baking dish. If you are adding frozen vegetables, sprinkle them over the chicken at this stage. Season the chicken lightly with garlic powder and black pepper.
In a medium mixing bowl, whisk together the condensed cream of chicken soup, sour cream, and chicken broth until the mixture is smooth and well combined. Pour this sauce evenly over the chicken in the baking dish.
In another bowl, combine the dry stuffing mix with the melted butter. Toss gently with a fork until the stuffing crumbs are evenly coated with the butter. This step ensures the top gets perfectly golden and crisp.
Sprinkle the buttered stuffing mix over the top of the chicken and sauce layer. Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the stuffing is golden brown and crunchy.
