  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1 cup white chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan with butter or line it with parchment paper, leaving a slight overhang on the sides for easy removal later.
  2. In a microwave-safe bowl, combine the melted butter and 1/2 cup of the white chocolate chips. Heat in 20-second intervals, stirring in between, until the mixture is smooth and completely combined.
  3. Whisk the sugar into the butter and chocolate mixture until well combined. Add the egg and vanilla extract, beating vigorously for about a minute. This helps create that classic shiny, crackly top on the blondies.
  4. Gently fold in the all-purpose flour and salt using a spatula. Mix only until no streaks of flour remain. Be careful not to overmix, as this can make the blondies tough instead of fudgy.
  5. Fold in the remaining 1/2 cup of white chocolate chips. Pour the batter into your prepared pan and spread it out evenly. Bake for 22 to 25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with just a few moist crumbs.
  6. Allow the blondies to cool completely in the pan before lifting them out. This is crucial for getting clean slices. Once cooled, cut into 16 even squares and enjoy.
