Preheat your oven to 350°F (175°C). Lightly grease a 9×9 inch baking dish with a small amount of coconut oil or vegan butter to prevent sticking.
In a large mixing bowl, toss the sliced apples with the lemon juice, coconut sugar, cinnamon, and cornstarch. Ensure every slice is evenly coated. The cornstarch will help thicken the juices as the apples bake, creating a delicious sauce.
In a separate medium bowl, combine the rolled oats, flour, chopped nuts, and sea salt. Pour in the melted coconut oil and maple syrup. Stir the mixture until it forms a crumbly, wet-sand consistency.
Transfer the prepared apple mixture into the greased baking dish and spread them out evenly. Sprinkle the oat topping over the apples, covering them completely. Use your fingers to create small clumps for extra texture.
Place the dish in the oven and bake for 40 to 45 minutes. You will know it is done when the topping is golden brown and the apple juices are bubbling around the edges. Remove from the oven and let it cool for at least 10 minutes before serving.
