  • 2 tablespoons pumpkin puree (not pumpkin pie filling)
  • 2 tablespoons maple syrup or granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1.5 cups ice cubes
  • Whipped cream (for topping)
  • A pinch of extra pumpkin spice (for garnish)

Instructions

  1. Step 1: Brew and Chill. Start by brewing a very strong cup of coffee or a double shot of espresso. It is important to let the coffee cool down to at least room temperature before blending so it doesn’t melt the ice too quickly. For the best results, you can even brew the coffee ahead of time and keep it in the refrigerator.
  2. Step 2: Combine Ingredients. In the pitcher of a high-speed blender, add the chilled coffee, your choice of milk, pumpkin puree, sweetener, vanilla extract, and the pumpkin pie spice. Adding the liquids first helps the blender blades move more efficiently.
  3. Step 3: Add Ice and Blend. Add the ice cubes to the blender. Secure the lid tightly and blend on high speed for about 30 to 45 seconds. You are looking for a thick, smooth, and slushy consistency with no large chunks of ice remaining.
  4. Step 4: Adjust Consistency. If the mixture is too thin, add a few more ice cubes and blend again briefly. If it is too thick to pour, add a splash more milk and pulse until it reaches your desired thickness.
  5. Step 5: Garnish and Serve. Pour the frappe into a tall glass. Top it generously with whipped cream and a light dusting of pumpkin pie spice or a drizzle of caramel sauce for an extra touch of decadence.
