  • 4 large ripe peaches, halved and pitted
  • 1 cup fresh blueberries or raspberries
  • 1 tablespoon lemon juice
  • 1 tablespoon honey or maple syrup
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cubed
  • A pinch of salt

Instructions

  1. Preheat your grill to medium-high heat (about 350°F to 400°F). Ensure the grates are clean and lightly oiled to prevent the peaches from sticking.
  2. In a medium bowl, gently toss the fresh berries with lemon juice and honey. Set them aside. Take your peach halves and lightly brush the cut sides with a tiny bit of oil or melted butter to help with caramelization.
  3. In another bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Use your fingers or a pastry cutter to work the cold, cubed butter into the mixture until it looks like coarse crumbs with some pea-sized pieces of butter remaining.
  4. Place the peach halves, cut-side down, directly onto the grill grates. Grill for 4 to 5 minutes until distinct grill marks appear and the fruit begins to soften. Carefully flip the peaches over so they are skin-side down.
  5. Spoon the berry mixture into the center of each peach half where the pit used to be. Generously pile the oat crumble topping over the berries. Close the grill lid and cook for another 8 to 10 minutes, or until the crumble is golden brown and the berries have started to burst and release their juices.
  6. Carefully remove the peaches from the grill using a wide spatula. Let them rest for 2 to 3 minutes before serving to allow the juices to set slightly.
