1 ½ cups canned pumpkin puree (not pumpkin pie filling)
¼ cup water
1 cup powdered sugar (for glaze)
2 tablespoons pure maple syrup (for glaze)
1 tablespoon milk or cream (for glaze)
Instructions
Step 1: Oven and Pan Preparation: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan thoroughly with butter or non-stick cooking spray. You can also line the bottom with parchment paper for even easier removal later.
Step 2: Combine Dry Ingredients: In a medium mixing bowl, whisk together the all-purpose flour, baking soda, salt, and pumpkin pie spice. Ensure there are no large clumps of spice so the flavor is evenly distributed.
Step 3: Whisk Wet Ingredients: In a large mixing bowl, beat the granulated sugar, vegetable oil, and eggs until the mixture is smooth and well-combined. Stir in the pumpkin puree and water until the mixture is a uniform orange color.
Step 4: Create the Batter: Slowly add the dry flour mixture into the wet pumpkin mixture. Fold gently with a spatula or whisk just until no streaks of flour remain. Be careful not to overmix, as this can make the bread tough.
Step 5: Bake the Loaf: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 55 to 65 minutes. To check for doneness, insert a toothpick into the center; it should come out clean or with just a few moist crumbs.
Step 6: Prepare the Maple Glaze: While the bread is cooling in the pan for about 10 minutes, whisk together the powdered sugar, maple syrup, and milk in a small bowl. The glaze should be thick but pourable. If it is too thick, add a few more drops of milk.
Step 7: Glaze and Serve: Remove the bread from the pan and place it on a wire rack. Drizzle the maple glaze over the warm bread, allowing it to drip down the sides. Let the glaze set for a few minutes before slicing and serving.
