6 cups Granny Smith or Honeycrisp apples, peeled and sliced
2 cups fresh or frozen cranberries
1/2 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1 cup old-fashioned rolled oats
1 cup light brown sugar, packed
3/4 cup all-purpose flour
1/2 cup unsalted butter, cold and cubed
1/2 teaspoon salt
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish or a deep-dish pie plate with butter or non-stick cooking spray to prevent the fruit from sticking to the edges.
In a large mixing bowl, combine the sliced apples, cranberries, granulated sugar, lemon juice, and ground cinnamon. Toss everything together until the fruit is evenly coated. Pour the mixture into your prepared baking dish and spread it out into an even layer.
In another bowl, whisk together the rolled oats, brown sugar, flour, and salt. Add the cold, cubed butter. Using a pastry cutter or your clean fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
Sprinkle the oat topping evenly over the apple and cranberry mixture. Be sure to cover as much of the fruit as possible, but don’t press down too hard; you want the topping to remain light and airy so it crisps up beautifully in the oven.
Place the dish in the center of the oven and bake for 40 to 45 minutes. The dessert is ready when the topping is golden brown and the fruit juices are bubbling around the edges. If the topping browns too quickly, you can loosely cover it with foil for the last 10 minutes.
Remove the crisp from the oven and let it sit for at least 10 to 15 minutes before serving. This resting time allows the fruit juices to thicken slightly, making it easier to scoop and serve.
