  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup vegetable oil or melted coconut oil
  • 2 large eggs, room temperature
  • ¼ cup water or orange juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan thoroughly with butter or non-stick cooking spray. For even easier removal, you can line the bottom of the pan with a strip of parchment paper, leaving a bit of overhang on the sides.
  2. In a medium-sized mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Ensure there are no large clumps of spices so the flavor is distributed evenly throughout the bread.
  3. In a large bowl, beat the eggs and then whisk in the granulated sugar and brown sugar until well combined. Stir in the pumpkin puree, oil, water (or orange juice), and vanilla extract. Whisk until the mixture is smooth and the sugars have begun to dissolve.
  4. Gradually add the dry ingredients into the wet ingredients. Use a spatula to fold the mixture together gently. Stop mixing as soon as no more streaks of flour are visible. Overmixing can lead to a tough, rubbery texture, so keep it light and airy.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Place it in the center of the oven and bake for 55 to 65 minutes. To check for doneness, insert a toothpick into the center of the loaf; it should come out clean or with just a few moist crumbs attached.
  6. Remove the pan from the oven and let the bread cool in the pan for about 10 minutes. This helps the structure set. Then, carefully transfer the loaf to a wire rack to cool completely before slicing. This patience ensures the bread doesn’t crumble when cut.
